Preparing the Chicken

Start by seasoning your chicken breast with salt, pepper, and a pinch of cayenne pepper. Heat a tablespoon of oil in a pan over medium heat. Once the oil is hot, add the chicken breast and cook until it's no longer pink in the middle, about 6-7 minutes per side. Once cooked, remove the chicken from the pan and let it rest for a few minutes before slicing it into thin strips.

Preparing the Vegetables

While the chicken is resting, you can start preparing your vegetables. Using the same pan, add another tablespoon of oil, then add your diced onions and bell peppers. Cook them over medium heat until they're soft and slightly caramelized, which should take about 5 minutes. Once they're done, remove them from the pan and set them aside.

Assembling the Quesadilla

Now comes the fun part – assembling the quesadilla. Lay one tortilla flat on a clean surface. Spread half of the cheese evenly over the tortilla, followed by the cooked chicken slices, the green onions and peppers, and finally the rest of the cheese. Top it off with the second tortilla.

Cooking the Quesadilla

Heat up a large, non-stick pan over medium heat. Carefully transfer the assembled quesadilla into the pan and cook until the bottom tortilla is golden brown and crispy, about 3-4 minutes. Then, using a large spatula, flip the quesadilla over and cook the other side until it's also golden brown and crispy. Make sure the cheese is fully melted inside.

Serving the Quesadilla

Once your quesadilla is perfectly cooked, transfer it to a cutting board and let it cool for a minute or two. Then, using a sharp knife or a pizza cutter, cut the quesadilla into wedges. Serve it hot, with your favorite dips like salsa, sour cream, or guacamole on the side.
